Easy Chocolate Cake Recipe

I have very fond memories of this chocolate cake recipe. I made it when my daughter and her first boyfriend broke up, and again when my grandaughter experienced her first broken heart. The first piece was swallowed amidst tears, the second was washed down with anger and the third was devoured while speculating as to a new possible beaux waiting in the wings. This is a very tasty and easy chocolate cake recipe. I highly recommend it as a birthday cake, wedding cake, or as in my family the “time to feel better” chocolate cake.

Ingredients:
2 8-inch round layer cake pans
2 ounces of unsweetened chocolate
1/4 pound butter
1&1/2 cups of sugar
2 eggs
2 teaspoons vanilla
2 cups of cake flour
1 &1/2 teaspoons baking soda
1/2 teaspoon of salt
1 cup of ice water
Pre-heat the oven to 350 degrees.
Grease the two cake pans. I prefer to butter each of the the pans and then sprinkle with flour.
Melt the chocolate and butter in a pot over simmering water or use a double boiler if you have one. Set aside to cool.
Cream the butter (I will soften if for 10 seconds in the microwave, put it in the mixing bowl and mash it with a fork) and slowly beat in the sugar with a mixer set on slow speed. Beat until the mixture becomes light and fluffy. Add the eggs and vanilla and mix well. Add the chocolate and stir thoroughly.
In a separate bowl combine the flour, baking powder, baking soda, sugar and salt. I run this mixture through a sifter but it is not necessary. Just mix very well. Add this to your chocolate and butter mixture and blend.
Add the ice water and beat until smooth.
Pour the batter into the pans. Bake for about 30 minutes or until a toothpick inserted in the center of the pan comes out clean. Let cool in the pans for about 5 minutes. Remove from the pans onto cooling racks.
Frost as desired. It also tastes great with no frosting and a big scoop of fudge ripple ice cream!

This book is a blessing for anyone with limited time who does not want to make cakes from scratch. I have tried a dozen from this book, adjusted them to my altitude (7,500 feet) and they were great. I recommend this book without reservation at twice the price.

This has a lot of good simple recipes. It is easy to follow. There is even a picture index at the beginning of the book for easy access to each recipe.
