Chocolate Mud Cake Recipe

I stole this recipe from my daughter-in-law after she suprised me with it on my 65th birthday. "Mud" is the correct word to describe this cake! It is ooey, gooey, muddily delicious. Make sure not to scrimp on the marshmallows as they really are the star of this whole sticky show!!

Chocolate Mud Cake Recipe

Ingredients:
CAKE:

  • 9X13 inch pan
  • 1 cup of softened butter (10 seconds in the microwave usually does the trick)
  • 4 eggs at room temperature. Warming them in your hands helps to speed the process along but they should sit out for about 1/2 hour.
  • 2 cups of white sugar
  • 1 1/2 cups of cake flour (all-purpose flour works well too!)
  • 1/2 cup of unsweetened cocoa
  • 1 teaspoon of vanilla
  • 1 cup of semi-sweet chocolate morsels (optional)-for extra gooiness
  • 1 cup of chopped nuts (optional)-for extra crunchiness
  • Mini-marshmallows

FROSTING:
1 cup of butter
1/3 cup of whole milk
1/4 cup of cocoa
1 lb. (3 cups) of powdered (confectioners) sugar
1 teaspoon of vanilla
Pinch of salt

Cake Directions:

  • In a medium saucepan melt the butter.
  • Add the sugar, eggs and cocoa. Beat well.
  • Add the flour, vanilla, salt, morsels(optional) & chopped nuts (optional). Mix well.
  • Grease and flour a 9X13 inch pan.
  • Add batter to pan.

Bake at 350 degrees F. for approximately 30 minutes. The cake is done when a toothpick, stuck in the cake’s center, comes out clean. Cover with the marshmallows immediately upon removing from the oven.

Frosting Directions:

  • Make the frosting as soon as you finishing placing the marshmallows on top of your cake.
  • In a medium saucepan, melt the butter.
  • Add milk and cocoa and mix untill smooth.
  • Beat in the sugar, salt and vanilla. Continue beating until the frosting is nice and creamy.

Pour the frosting over the cake while it is still warm. Some of the frosting will soak into the cake leaving the marmallows visible.

For an even more decadent cake, drizzle on some caramel or rasberry sauce. Serve with Rocky Road ice cream for the ultimate dessert!!
