Chocolate Lava Cake

I find this a great dessert to make for a dinner party. Everyone gets their own little lava cake in a ramekin and there is no mess trying to cut and serve a large cake or pie. Of course it is also very delicious and can be garnished and decorated many different ways!

Ingredients:
4 Ramekins
6 ounces of semi-sweet baking chocolate. You can also use a dark chocolate bar. Just make sure it is as least 70% cocoa.
6 ounces of butter diced at room temperature.
3 eggs
1/2 cups of white sugar
1/3 cups of flour (cake flour or all-purpose flour)
Extra butter to use in the ramekins.
Directions:
- Pre-heat oven to 350 degrees F.
- Melt chocolate over low heat in a double boiler. If you do not have a double boiler than fill a large pan with water and place over the heat source. Put the chocolate in a small saucepan and place the pan in the water.
- After all the chocolate melts, stir in the butter until is also melts completely.
- In a medium sized bowl, beat sugar and eggs together until the mixture starts to whiten.
- Add the melted chocolate and butter to the sugar and egg mixture. Blend well.
- Add the flour to the batter and mix well.
- Butter your ramekins.
Pour batter into ramekins and bake at 350 degrees for about 10 minutes. The bottom, sides and top of the cake will bake, leaving the center liquid and delicious!! You can test using a toothpick. It should come out all gooey after being stuck in the center of the cake.
Turn the ramekin over onto a dessert plate and serve.
Garnish Ideas
Add fresh fruit such as strawberries or rasberries as a garnish . Or drizzle caramel sauce or rasberry sauce over the cake and then garnish with fruit. Add a small scoop of mocha ice cream or top with fresh whipped topping and a cherry. There are many different garnishes you can add to dress up your lava cake. Just use your tastbuds and your imagination!
