Awesome German Chocolate Cake Recipe

This is a very easy chocolate cake recipe to make. The best part is the Coconut-Pecan frosting. I always make a little extra so I can enjoy a few spoonfuls after the cake is frosted. Yes I am an admitted frostingoholic. And the pecans really add a nice touch to this German chocolate cake.

German Chocolate Cake RecipeIngredients:
three 9-inch round layer cake pans
4 ounces Baker’s German’s Sweet Chocolate
1/2 cup of boiling water
1 cup of butter
2 cups of sugar
4 eggs, separated
1 teaspoon of vanilla
2 1/4 cups of cake flour (all-purpose flour can also be used)
1 teaspoon baking soda
1/2 teaspoon of salt
1 cup of buttermilk

Frosting:
This recipe will make 2&1/2 cups
1 cup of evaporated milk
1 cup of sugar
2 egg yolks, slightly beaten
1/2 cup butter
1 teaspoon vanilla
1 &1/3 cups of flaked coconut
1 cup of chopped pecans

Cake Directions:
Pre-heat oven to 350 degrees

Butter and flour three 9-inch round cake pans.
Line the bottom of the pans with buttered parchment paper.

Melt chocolate in a double boiler or a saucepan over a pot with boiling water. Let cool

In a large bowl cream softened butter and sugar until light and fluffy. Add the egg yolks one at time. Beat well after each yolk is added. Blend in vanilla and the chocolate.

In a separate bowl sift the flour, baking soda and salt together. Add some of the flour mixture to the chocolate and then some of the buttermilk. Continue alternating the flour and buttermilk beating well after each addition until the mixture is smooth. Beat the egg whites and then fold them into the mixture.

Pour mixture into the 3 pans and bake for 35 minutes or until a toothpick inserted in the center of each pan comes out clean. Cool in the cake pans for 5 minutes and then turn out onto the cooling rack.

Coconut-Pecan Frosting:

In a saucepan, mix the evaporated milk, sugar, butter, egg yolks and vanilla. Cook over a medium heat stirring until thick. It will take about 15 minutes. Stir in the coconut and pecans. Let cool until it is thick enough to spread. Only frost the tops of each 9-inch cake.
